Cooking Method

Place tuna, onion, eggs, carrot, rice, flour and salt and pepper in a bowl and mix well until combined. Add enough water to form a batter.

Heat oil in a non-stick frying pan, then add tablespoons of the mixture and cook for approximately 1-2 minutes each side or until golden.

Serve with lemon wedges.

  • 250g packet UNCLE BEN'S® Express Golden Vegetable Rice
  • 185g can tuna in olive oil, drained
  • 1 large onion, finely chopped
  • 2 eggs
  • 1 carrot, grated
  • ½ cup plain flour
  • salt and pepper, to taste
  • 1-2 tablespoons water
  • oil, for shallow frying
