Eggplant & Bean Combo

- 1 x 300g packet Uncle Ben's® White Rice
- 1 tablespoon olive oil
- 1 large eggplant, cubed
- 1 tablespoon Moroccan seasoning
- 125g tin red kidney beans, rinsed and drained
- 2 tablespoons tomato sauce
- 2 cups English spinach, chopped

- Heat oil in a non-stick frying pan. Add eggplant and cook over high heat for 2 minutes.
- Add seasoning, kidney beans and tomato sauce. Mix through spinach and cook for 2 minutes.
- Heat rice to directions on packet and serve with eggplant mixture.
