Spicy Chicken & Rice

  • 1 x 250g packet Uncle Ben's® Express Special Fried Rice
  • 2 tbsp olive oil
  • 250g chicken thigh fillets, sliced
  • 1 onion, thinly sliced
  • 1 red chilli, finely chopped
  • 1 tbsp ground cumin
  • 2 cloves garlic, crushed
  • 1 red capsicum, thinly sliced
  • 2 tbsp sour cream

Cooking Instructions

  1. Heat oil in a non-stick frying pan and add chicken and cook over high heat for 3 minutes.
  2. Add onion, chilli, cumin and garlic and cook for 1 minute. Add capsicum and cook a further 2 minutes over medium heat.
  3. Stir through sour cream and serve with rice heated to directions on packet.
