Vitality Rice & Vegetables

- 1 x 300g packet Uncle Ben's® White Rice, cooked
- 1 tablespoon olive oil
- 1 leek, finely sliced
- 1 tablespoon butter
- 2 cups vegetables, thinly sliced (i.e. celery, mushrooms, capsicum, onion, broccoli, carrot)
- ½ cup water
- 1 tablespoon Tamari or soy sauce

- Heat oil and butter in a non-stick frying pan. Add leeks and cook for 3 minutes over medium heat.
- Place vegetables and water in a covered microwave safe container and cook on HIGH in microwave for 3 minutes.
- Drain the vegetables and add to the leeks. Mix in rice and tamari sauce.
