Baked Honey & Soy Salmon with Brown & Wild Rice

Discover the flavour combination of honey and soy in this light dish. Serve with lightly charred broccoli florets for a perfect summer dish or light lunch!

Ingredients

  • 2 Salmon Fillets
  • 1 tsp Runny Honey
  • 2 tsps low sodium Soy Sauce
  • 1 Red Chilli
  • 2 handfuls of Broccoli Florets
  • 1 tsp Cooking Oil
  • 1 pouch UNCLE BEN'S® Brown & Wild Rice 250 g

Instructions

  1. Pre-heat the oven to 180°C and line a baking tray with tin foil.
  2. Pre-heat a large frying or grill pan on on medium heat.
  3. In a bowl, mix together the honey and soy sauce to create a paste. Place the salmon fillets onto the bakin gtray, skin side down, rub the soy and honey paste onto the fillets.
  4. Slice a chilli lengthways and place one half on each of the salmon fillets. Place fillets into the oven and cook for 10-12 minutes.
  5. In the pre-heated pan add oil and allow to heat up. Place the broccoli florets into the pan and cook for 3-5 minutes shaking the pan occasionally allowing the broccoli to gain a charred colour all over.
  6. Prepare the pouch of UNCLE BEN'S® Brown & Wild Rice following the instructions on the packet.
  7. Once the salmon is cooked, serve up with a handful of the broccoli and half of the rice pouch.
