Chocolate and Chilli Bean Burrito with Mexican Style Brown Rice

  • 1 Red Onion, sliced
  • 4 squares Dark Chocolate
  • 1 tin Mixed Beans
  • 1 Avocado
  • ½  Lemon, juiced
  • 20 g Mature Cheddar Cheese
  • 1 Baby Gem Lettuce, sliced
  • 8 Soft Tortilla Wraps
  • 1 pouch UNCLE BEN'S® Mexican Style Brown Rice


  1. Drizzle olive oil into the frying pan, add the red onion and cook until translucent. Add the tin of mixed beans, then add a drop of water and simmer for 5 minutes.
  2. Half the avocado and remove stone and outer skin. In a small bowl, mash the avocado until smooth, add lemon juice and set aside.
  3. Add the dark chocolate to the frying pan and incorporate well. Once melted, take the pan off the heat.
  4. Prepare UNCLE BEN'S® Mexican Style Brown Rice pouch as per instructions on pack.
  5. Spoon the UNCLE BEN'S® Mexican Style Brown Rice across the centre of the tortilla, top with mixed beans, a sprinkle of cheddar cheese, a spoonful of guacamole and some lettuce.
  6. Fold over one end and roll the tortilla up tightly, serve and enjoy!
