Grilled Chicken Pitta

Succulent and flavoursome chicken pieces layered with salad and feta cheese, this pitta is great to have with dinner or even lunch! Mix your salad ingredients how you like and you can experiment with different cheeses, too!

  • 1 tbsp Oil
  • 1 Skinless Chicken breast, sliced into thin strips
  • 1 tsp Dried Oregano
  • 1 tsp Paprika
  • 1 Garlic clove, crushed
  • 2 Pitta Breads
  • 1 small Cos lettuce, chopped
  • ½ punnet of Cherry tomatoes, halved
  • ½ Red onion, finely chopped
  • 50 g Feta, crumbled
  • 250 g UNCLE BEN’S® Mexican Style Rice


  1. Add the chicken to a mixing bowl along with the oil, paprika, oregano and garlic. Mix to coat chicken and set aside for 15 minutes to marinate.
  2. Heat a frypan on high heat and cook the chicken for 8-10 minutes, turning halfway. Meanwhile, heat the Uncle Ben’s rice according to pack instructions.
  3. Construct the pitta: Cut the bread in half and open to make pockets. Firstly, add a layer of the Uncle Ben’s rice followed by the grilled chicken. Top with the lettuce, tomatoes, red onion and feta. Repeat with all pockets.
