Lime & Ginger Prawn Skewers

This super quick 10-minute-marinade recipe for prawns is delicious paired with grilled bok choy and our Brown & Wild rice.

  • 8 large Prawns, shelled and de-veined
  • 1 Lime, juiced
  • 1 tsp Ground Ginger
  • 1 Garlic Clove
  • 1 tsp Cooking Oil
  • 2 small Bok Choy
  • 1 pouch UNCLE BEN'S® Brown, Red & Wild Medley 250 g


  1. In a bowl mix together the lime juice, ginger, garlic and cooking oil. Add prawns to the marinade and allow to marinate for 10 minutes.
  2. While the prawns are marinating, turn the grill onto a medium heat. Slice the bok choy lengthways in half and slightly oil.
  3. Place flat side facing upwards under the grill and cook for 5-6 minutes.
  4. Once the prawns have marinated, put 4 onto each skewer. Place under the grill and cook on each side for 3 minutes. Once cooked, remove from grill.
  5. Prepare UNCLE BEN'S® Brown, Red & Wild Medley Rice as per the packet instructions.
  6. Divide the rice and bok choy between the place and top with prawn skewers.
