Spicy Beans with Brown & Wild Rice

This fiery salsa packs a punch and is the perfect partner to our Brown & Wild Rice! Garnish with a lime wedge if you like it cooler.

Ingredients

SALSA

  • 2 Roma Tomatoes, seeded and chopped
  • 1 medium Red Onion, chopped
  • 1 clove Garlic, finely chopped
  • 1 tsp Lime Juice
  • 1 tsp Vegetable Oil
  • ¼  tsp Chipotle Chilli Powder

RICE AND BEANS

  • 1 tbsp Vegetable Oil
  • 1 Medium Red Capsicum, chopped
  • 255 g no-salt-added Black Beans, rinsed and drained
  • 255 g no-salt-added Dark Red Kidney Beans, rinsed and drained
  • 170 g Sweetcorn
  • 1 Jalapeno, thinly sliced
  • 2 pouches UNCLE BEN'S® Brown & Wild Rice 250 g
  • 170 g Light Sour Cream
  • Coriander
  • Lime, 2 wedges
  • Optional: Chipotle Chilli Powder, if desired

Instructions

  1. In a medium bowl, stir together all salsa ingredients. Set aside.
  2. In a large pan; heat oil over medium heat. Cook and stir capsicum for 2 to 3 minutes or until softened.
  3. Stir in beans, corn and jalapeno pepper. Cook and stir 2 to 3 minutes until hot.
  4. Meanwhile, heat UNCLE BEN'S® Brown & Wild Rice as directed on package. Stir rice into bean mixture.
  5. Continue to cook and stir 1 minute longer until heated through and ingredients are combined. (Add 1 to 2 tablespoons water to keep rice and beans moist, if needed.)
  6. Divide mixture evenly among 4 dinner plates and top with salsa and sour cream. Garnish with coriander and lime wedge.
