Vegetarian Lettuce Burritos

Ingredients

  • 2 x 250 g Uncle Ben’s Mexican Style Rice Pouches
  • 150 g black beans,drained
  • 12 large cos lettuce leaves
  • 1/4 cup light  sour cream
  • 1/2 cup light grated cheddar cheese
  • 300 g can corn kernels, drained
  • 1 avocado, thinly sliced
  • 1/3 cup fresh coriander leaves
  • Lime wedges, to serve

Instructions

  1. Heat rice following packet directions. Fluff with a fork, add black beans.
  2. Meanwhile, trim 6cm off base of each lettuce leaf. Spread leaves with sour cream. Top with rice, cheese, corn, avocado and coriander.
  3. Fold over base first, then fold in sides, leaving tops exposed. Secure with toothpicks. Serve with lime wedges.
